The vineyard lies at an altitude of 700 meters above sea level within the viticultural zone of Agios Panteleimon, in the Amyndeon Appellation. Despite the cold winters and warm summers here, the four neighbouring lakes contribute to the creation of a mild continental climate that makes this the perfect spot for these vines. The soil here is also sandy and poor, which sounds like a bad thing – but it is actually perfect for the production of quality wines! The vines have to work harder and put more energy into producing better grapes, resulting in exquisite wines with rich aromas.

As its label suggests, our ASSYRTIKO is produced from selected vine parcels located in The North of Greece, at the village of Agios Panteleimonas in Florina, at the unique plateau of Amyndeon. There lies the cooler viti-vini region of Greece, consisting of an exceptional mixture of elements. High altitudes between 600 – 700 meters and poor sandy soils on a stunning terrain of raw mountainous beauty. The four neighboring lakes act as a moderating influence of surrounding temperatures all year round, contributing to the continental-ish climate with cold -often snowy- winters and mild summers, notable diurnal variation, and the beneficial, trademark to the area, wind blowing from the north. For this introduction to the varietal mountainous expression, we select mostly young vines of Assyrtiko (average age of vines 10 years).

Regional information
The Amyndeon wine-growing region covers a plateau bounded by Mounts Vermio, Vorras (Kaimakcalan) and Vitsi. The area enjoys a continental climate, with warm summers and cold winters. Amyndeon's four lakes, Vegoritis, Petres, Cheimaditis and Zazari influence the region's local climate, evening out extreme conditions and favouring viniculture.
Tasting notes
This wine is fresh and light across the tongue with nuances of fresh lemon, white nectarine, lemon verbena and jasmine, all wrapped up in a long and mineral finish.

Vinification details
The grapes are chilled overnight and cold soaked in order to maximize the extraction of aroma precursors into the must. Following racking, the must is inoculated with selected yeasts. At the end of the fermentation, the wine matures for a period of 4-5 months on its lees, gaining more volume and complexity.
