At twelve weeks of age, our piglets are moved into large, naturally lit sheds with an outdoor area, where due to our low group numbers, we can ensure the welfare of the pig remains paramount. Tended by our farmers, the pigs are protected from the elements, with lots of space, natural light and natural ventilation, and deep straw beds. Our pigs develop and mature to produce the delicious meat you've come to expect from Packington. It may take longer to produce pigs in this way and cost a little more, but the results are worth it, and all our customers agree. All our pork is prepared, hand cut and packed by Jon Thorner's, a Q Guild Master Butcher. Oven cook - From Chilled.
Remove from fridge 30 minutes before cooking ensuring all packaging removed.
Preheat oven: 200°C / Fan 180°C / Gas Mark 6.
Place on a baking tray in the centre of a pre-heated oven for 45 minutes. Turning half way.
Ensure the joint is cooked, test and see the juices run clear.
Allow to rest for 5 minutes.
Oven cook - From Chilled. Remove all packaging in preparation for cooking. Allow the slices to get to room temperature. Place the joint in a roasting tin, rub the skin with a small handful of salt or brush with oil. Place in a pre-heated oven gas mark 5, 200°C for 50 minutes. Ensure the joint is cooked, test and see the juices run clear.

Salad of crisp Packington Pork belly, little gem hearts, rocket, pear and blue cheese dressing
Packington Pork belly slices 450g
1lt Chicken stock
4 Heads of little gem hearts
50g Rocket
50g Chives
1 Pear
50g Blue cheese – Cropwell Bishop Stilton
100ml Whipping cream
1.
Bring the chicken stock in a pan up to the boil, reduce the heat so it is just simmering. Add the Packington Pork belly slices.
2.
Cook for 1.5 hours over a gentle heat.
3.
Break the little gem hearts into individual leaves and wash in cold fresh water, drain well.
4.
Add 25g of the blue cheese to a blender along with the cream. Blend until smooth.
5.
Core and finely slice the pear, add to a mixing bowl, along with the little gem hearts, rocket, remaining blue cheese, and the blue cheese dressing. Toss the salad together.
6.
Remove the Packington Pork belly pieces from the chicken stock and drain on kitchen paper.
7.
In a frying pan add a little oil and heat up. Place the Packington Pork belly pieces to the pan and cook until golden and crisp.
8.
To serve place the salad in a bowl, arrange the Packington Pork belly pieces on top and sprinkle with finely chopped chives.
