When cooked, Aurum develops a delightful golden crust, with a squeaky, yet yielding interior.
This new and delicious cheese is handmade by award-winning cheesemaker Martin Gott and his partner Nicola at St James Cheese, who also make Paxton & Whitfield's exclusive Cullum. St James Cheese is a small family-run cheese dairy based in the southmost part of Cumbria's picturesque Lake District. They also make Paxton's delicious St James and Ingot cheese.
Due to Cullum's success, Martin was keen to collaborate with Paxton & Whitfield on a new project, which was to create a grilling cheese exclusively made with organic cows' milk from JR Strickley. The milk supplied from JR Strickley is of the highest quality, sourced from a 5th generation farm, recognised for going the extra mile to promote habitat and environmental management. The 120 dairy shorthorns were chosen specifically for the landscape, and the cows are fed a diet that benefits both the cow and the land. The dairy is located less than a 30-minute round trip from the farm, and the goal is to showcase the complex and high-quality milk using their cheesemaking skills.
The cheese is hand-made using traditional techniques and simply salted in a brine solution.
The word “Aurum” is the Latin word for Gold which reflects both the golden colour of the high-quality milk and the golden colour the cheese develops when cooked.
The cheese comes packed and labelled as a 200g piece and a dry cider makes the perfect pairing to this delicious squeaky cheese.
