Ingredients

INGREDIENTS:Coriander Seed, Turmeric, Ginger, Cumin Seed, Salt, Cayenne Pepper, Dried Garlic, Pimento, Black Pepper, Fenugreek.

Preparation and Safety

Medium chicken curry - Serves 4

 

Before cooking: Peel and slice 1 medium-sized onion. Crush 2 garlic cloves. Chop a good handful of fresh coriander.

During cooking: Heat 2 tbsp of vegetable oil in a large non-stick saucepan. Add the onion and garlic, and fry over a moderate heat until soft and golden. Stir in 2 tbsp curry powder and a 400g pack of diced chicken breast. Brown for 2 minutes, stirring occasionally. Add 1/2 x 400g tin of chopped tomatoes and 100ml water. Simmer until sauce is thickened and chicken is cooked through. For a more intense flavour increase curry powder to taste.

After cooking: Remove from heat and stir in 100ml of Greek-style natural yogurt. Season to taste, garnish with the coriander and serve piping hot with basmati rice.
