The Ostrich Gold Standard Steaks we work with are pre sous vide. We do this in order to tenderise the fillet even further so it becomes a melt in your mouth eating experience. After all, Ostriches aren't Cows! A cow wouldn't last 30 seconds in Cruga National Park whereas Ostrich outrun Lions over 70% of the time and are very much super athletes of the animal kingdom meaning their meat is extremely lean and muscular. So we sous vide the Gold Standard steaks in a BBQ marinade before blast freezing to preserve this incredible quality. For those of you interested in a healthy steak, look no further! Our Gold Standard Ostrich has 24g of Protein and 1g of Saturated Fat per steak!
We are very conscious that while we have done our best to advise on cooking instructions, everyone's ovens, grills and frying pans operate at varying temperatures. As such, if in doubt, make sure you cook on a lower heat than ordinary steak and do not cook well done!. Given the low fat levels the worst thing you can do is over cook Ostrich steak because due to the muscular nature of the Ostrich this will make the meat go tough. So better to go low and slow when cooking this steak and take your time rather than risk overcooking it.
We can also proudly report that we donate 2p from every packet we sell to the charity Lion Landscapes who specialise in protecting wild lion populations across Africa. Lion populations are plummeting and we have no desire to let this world become a place where the planet's most magnificent predator can only be seen in a zoo behind bars.

Preheat the frying pan until hot.
Remove all packaging, add a little oil to the pan and add the steak to the pan, drizzling the marinade over the steak. Heat the Steak for approximately 2-21/1 minutes per side caramelising the marinade. Allow to rest for 2 minutes and serve.
Shallow Fry - From Chilled. The following instructions are a guideline only.
Defrost in the refrigerator overnight and cook from chilled. Remove all packaging, add a little oil to the pan and add the steak to the pan, drizzling the marinade over the steak. Heat the steak for approximately 2-2 1/2 minutes per side, caramelising the marinade.
Allow to rest for 2 minutes and serve.
