This is a cool and dry region, where rainfall occurs mostly during the winter period. Vinification details: Sauvignon Blanc grapes are hand harvested early in the morning when temperatures are cooler, which helps to retain aromas and flavours. The grapes are gently pressed at a controlled temperature of 15C with selected yeasts, to preserve delicate varietal characteristics, typical of Sauvignon Blanc grapes from the cooler coastal zones in Chile.
