Preparation and usage: Wash 200g of rice with cold water, drain and repeat until the water is clear. Cook rice as per packet instructions. Once rice is cooked, add 3 tablespoons of sushi rice vinegar. Gently mix the sushi rice vinegar through the rice while it is still warm, cutting into the rice with a spatula to avoid breaking the grains.
