Storage
Keep refrigerated. Once opened, keep refrigerated and consume within 24 hours. Do not exceed the use by date. This product has been specially sealed for freshness and tenderness. Upon opening you may experience a faint odour. This is normal and will quickly disperse. When the meat comes into contact with the air it will quickly take on a brighter appearance. This natural process is known as blooming.
Suitable for freezing. Freeze before date mark shown and consume within 3 months.
Defrost and consume on day of defrost.
Once defrosted, do not refreeze.

Preparation and Usage
Cooking Instructions For best results oven cook from chilled.
Remove all packaging.
Oven Cook 240C / 475F / Fan 220C / Gas 9/30 mins Then Reduce Heat Oven Cook 190C / 375F / Fan 170C / Gas 5 Preheat oven. Place the joint on a chopping board. Rub the rind dry with kitchen roll and cover with 3 teaspoons of salt, working it into the cuts. Leave at room temperature for at least 30 minutes. Rub all the salt off the joint and from between the cuts, pat dry. Lightly cover the rind with 1/2 teaspoon of salt. Place in a roasting tin and cook for 30 minutes before reducing the temperature and cooking for a further 30 minutes per 500g. After cooking allow to rest for 15-20 minutes and remove string before carving.
For Perfect Pulled Pork:
1 Preheat oven to 180C/350F/Fan 160C/Gas 4
2 Place in an ovenproof dish with 500ml of water and cover tightly with foil. Place on the middle shelf of the oven and cook for 5 hours
3 After cooking allow to rest for 15 minutes and remove string and rind before shredding the joint apart using 2 forks
Not suitable for microwave cooking. Always follow the cooking instructions and ensure meat is thoroughly cooked. Raw/undercooked meat may contain harmful bacteria that may cause food poisoning. Always wash hands, chopping boards and utensils after contact with raw meat. Check product is piping hot before serving. Do not reheat.
