Manzanilla sherry is a special style of fino that originates only from the coastal town of Sanlúcar de Barrameda at the estuary of the Guadalquivir River. It is here that the family firm of Barbadillo produces this wonderful fresh and zesty wine, showing the crisp apple and nutty palate typical of these pale sherries. Barbadillo is an independent family founded in 1821 with its own vineyards in the 'Jerez Superior' district and its original 'bodegas' in the centre of Sanlucar de Barrameda. Tasting notes: Appearance: Beautifully clean, brilliant and intense with a pale yellow colour. Nose: Appealing and honest on the nose, with intensity and finesse originating from the prolonged contact with 'flor' yeast. Delicate hints of salty air and camomile. Palate: Extraordinarily dry on the palate but then smooth and harmonious on the finish. Subtle, slightly, salty with flavours of crisp apple and brioche.

Vinification details: A bone dry Manzanilla Pasada Sherry which has been biologically aged for 6 years in the old oak casks at Barbadillo's bodegas in the seaside Sherry town Sanlúcar de Barrameda. The sea breezes that blow into Sanlúcar are what gives Manzanilla its hallmark salty tang.
