Grape variety: Chardonnay. Current vintage: 2025. Regional information: The vineyard is located on the border of Étang de Thau, well-known to be one of the coolest of the Languedoc. Chalky and sandy soils.
Tasting notes: This Chardonnay has aromas of ripe quince and citrus. A part is aged in French oak, bringing texture and a touch of spice.
Alcohol by volume: 14%. Producer: So Vigneron. Winemaker: Claude Serra. Vinification details: Harvested early in the morning to keep the freshness of the grapes. Fermentation at 16°c after a clean racking of the must. Maturing in tank on fine lees for two months then 15% of the wine is matured in French oak.
