Regional information: Sauvignon Blanc grapes are hand harvested early in the morning when temperatures are cooler, which helps to retain aromas and flavours. The grapes are gently pressed at a controlled temperature of 15C with selected yeasts, to preserve delicate varietal characteristics, typical of Sauvignon Blanc grapes from the cooler coastal zones in Chile.

Vinification details: The grapes for this wine come from the Fundo El Rosario and Cuncumen vineyards in the coastal zones of San Antonio and Leyda Valley. The proximity to the Pacific Ocean provides cool nights as well as morning mists and sea breezes during the afternoons. This is a cool and dry region, where rainfall occurs mostly during the winter period. These conditions help to achieve slow ripening grapes, resulting in a wine with crisp natural acidity, complex flavours and an elegant minerality.
