



Billecart-Salmon Sous Bois Champagne is a non-vintage blend of equal parts Chardonnay, Pinot Noir, and Pinot Meunier. Aged in oak barrels, it develops a rich and complex character. Enjoy it chilled as an aperitif or with light dishes.

Representing a mastery over the art of blending multiple grape varieties to create a rich olfactory impact, Billecart-Salmon's Cuvee Brut Sous Bois is unusual in the sense that it uses equal quantities of the three Champenois grape varieties. Once blended, the Champagne is vinified and aged in oak barrels at low temperatures for a more complex character.
Founded after the union of Nicolas François Billecart and Elisabeth Salmon, the family-owned Billecart-Salmon has blended Champagne for over two centuries. Guided by the motto quality over quantity, the House employs gentle pressing and slow fermentation to reveal the purity of fruit and the elegance of its terroir.
