xAlbacore tuna is known in Spain as Bonito del Norte. Located on Spain's north coast, Conservas Ortiz have processed fish by traditional methods since 1891. All Ortiz Bonito del Norte albacore tuna is caught one by one with rod and line.
Ortiz pack these prime tuna fillets in their escabeche sauce or dressing: Spanish olive oil combined with light white wine vinegar. Tuna packed in escabeche sauce makes lighter versions of classic tuna tapas. And you can use the escabeche sauce to make a dressing for tuna and white bean salad.
