Vinification details: The different grape varieties are harvested separately at the optimum of their respective maturity. The vinifications respect the specific characteristics of the grape varieties and the terroirs. Following manual and very early morning harvests, when the outside temperature is still cool, this rosé is produced by bleeding. The bunches are left whole to macerate in a vat and the juice is extracted after a short maceration, when the color has reached the desired level. The alcoholic fermentation takes place in the liquid phase under temperature control, in order to develop the maximum aromas. Part of this wine was vinified in barrels. In order to keep all its freshness and natural acidity, no malolactic fermentation takes place and the wine is bottled quickly.
