Vinification details: Hand-picked harvesting in boxes of 15kg. After de-stemming, the grapes are cold macerated at 5ºC for 12 hours. Fermentation and ageing in stainless steel vats. A small proportion of the wine (15%) is gently rested in French oak barrels to aid texture, weight and complexity. This judicious approach to oak influence aims to support the natural expression of the grape and allow its personality to shine.
