Using a thirty year old recipe, Coln Valley's finest Scottish salmon is naturally smoked in traditional London brick kilns using the highest quality oak chippings. This process takes about 5 days from smoke to pack, giving a delicious smoked salmon flavouring that is unique to Coln Valley.
This Scottish salmon is then delicately sliced and is ready to serve. D-cut is a slicing technique that gives the salmon slice a 'D' shape. It involves slicing the fish from back to belly. This includes the salmon's rich, flavoursome brown meat.
