Topside is a lean, tender cut from the upper hind leg, delicately marbled making it perfect for roasting in the oven or slow cooking. Our award-winning organic herd of traditional, rare breed animals grazes lush clover-rich grass pastures throughout their lives, producing the best quality tender, succulent meat. Our beef is hung between 7 and 14 days for maximum flavour. We produce the finest award-winning meat by raising our animals to an exceptional standard and have our own abattoir to ensure the highest welfare and reduce food miles. Our animals mature slowly, in harmony with nature, nourishing the soil they roam on, keeping our British countryside diverse and thriving.

Storage: Keep refrigerated 0-5°C. Consume within the use by date. Once pack is opened use on the same day. Suitable for freezing on day of purchase. Use within one month. Defrost fully before use. Do not re-freeze once defrosted.
Preparation and Usage: For perfectly cooked beef, our head chef recommends: Topside : Heat oven to 200°C (fan 180°C)/Gas mk 6. Season, rubbing the fat with flour and dry mustard. Seal for 3-4 minutes in a hot pan. Roast for 20 minutes per 500g, plus a further 20 minutes. Baste well to keep it succulent and ensure the surface is thoroughly cooked. Cover and rest for 10-15 minutes before carving. Brisket & Silverside: Heat oil in a pan, season and seal joint for 3-4 minutes. Add beef stock to cover, plus seasonal vegetables, herbs or spices, Worcestershire sauce or red wine if you like. Bring to boil, skim off fat, cover with foil and place in the oven at 170°C (fan 150°C)/Gas mk 3, for 3 hours. Remove from liquid and rest for 10-15 minutes before serving. Wash hands, knives and surfaces thoroughly before and after preparing raw meat.
