Plénitude is Dom Pérignon's three-stage maturity concept developed over many years, based on the discovery that Champagne matures in three distinct stages. Champagne enters the first Plénitude after eight years of ageing - the standard age for the label's vintages - before entering the second after 15 years and third after around 30 years. 2004's weather was consistent, as evidenced by nuanced, precise grapes. The P2 of this vintage has a less reductive palate than the original, with a medium body and succulent acidity.
