Regional information: Located in the Enclave des Papes around the village of Visan, an hour north of Avignon, the Domaine de Mongillon vineyard is planted on the appellation areas of Visan and Valréas at the foot of the Mountains of La Lance and Angèle. The first traces of life discovered in Visan date from Antiquity and vines were first planted here in the 3rd century. Visan has had its communal wine press since 1250. Once owned by the Knights Templar, Visan became papal land in 1344. Visan is a village with smooth wines, the silkiness of which is enhanced by spicy notes. Concentrated around the village, on the hills running down to the plain, the vineyard covers half of the estate. Planted on clay-limestone soils, the vineyard favours Grenache and Syrah grapes which, combined with other grape varieties such as Carignan and Mourvèdre mean this terroir produces overwhelmingly smooth and elegant reds.

Vinification details: Fermenting follows the traditional method. The grapes are macerated in heat-regulated tanks for around fifteen days. The temperature then gradually increases during fermentation up to a peak of 30°C. Generally, each grape variety is vinified separately, but sometimes the grenache and syrah are combined in the tank during fermentation in order to produce an even more harmonious wine. The wines are then blended before being aged in stainless steel tanks.
