Recipes: Cashew Barfi (Fudge) - Serves 10. Ingredients: 375g unsalted East End Raw Cashews, 800ml milk, 250g light brown sugar, 1/4 tsp ground East End Green Cardamom, 1 tbsp East End vegetable margarine. Instructions: Soak the cashews in a bowl of boiling water for about an hour, then drain. Puree 200ml milk and cashews in a blender. Heat the remaining milk, the sugar, cardamom and margarine over medium heat for about 15 minutes, stirring constantly, until the sugar dissolves and the mixture is thick. Add the cashew paste and mix thoroughly to prevent the cashews from sticking to the bottom of the pan. Cook and stir for 4-6 minutes until the nut paste is thick and sticky. Remove from heat and spread evenly in a lightly greased baking pan/tray. Cool, cut into squares, and serve.
