Recipes: Gluten Free Corn Fritters. Fry 1 sliced leek and 2 crushed garlic cloves in 1/2 tbsp oil for 5 mins. Add to bowl with 1 can drained corn, 6 tbsp chickpea flour, 1 tsp smoked paprika and 2-3 tbsp cold water. Season with salt/pepper and form 6 fritters, about 1 cm thick. Fry in 1 tbsp oil for 3-4 mins each side. Bean & Corn Chilli. Fry 1 diced onion, garlic clove and 1 can corn in tbsp oil for 10 mins. Add 1 sliced red pepper,1 can chopped tomatoes, 150 ml vegetable stock, 1 tbsp tomato puree and 1 tsp each of cumin, paprika, chilli powder. Simmer for 20 mins. Add 1 can drained kidney beans, simmer for 5 mins.
