Preparation and Usage: Xanthan gum can help to bind gluten free bread and baked goods, if not already included in your flour blend, for bread 2 tsp to 500g flour, cake 1/4 tsp to 200g flour, pastry a pinch to 100g flour. For sauce, sieve 1 tsp over 1.5 tbsp oil, mix into a paste and slowly beat in 500/600ml cold liquid before heating and seasoning.
