Vinification details: Merlot and Pinot Noir grapes were machine-harvested, lightly crushed and destemmed before being pressed. Crushing breaks the skins, releasing red colour and berry flavours into the juice. Pressing adds more colour and flavour, creating a bright cherry-red juice. From here, it is treated like a white wine. Aromatic yeasts enhance the fruity notes, and fermentation happens slowly at a cool 11-16°C. During this process, the intense red colour fades, creating a beautiful pink shade. It then spends 2-3 months on yeast lees before being stabilized, filtered, and bottled.
