Preparation and Usage Panini with Mortadella, Gorgonzola Cream Sauce and Grilled Aubergines Ingredients 1 durum wheat bread or focaccia 30gr Grilled Aubergines 70gr Mortadella 2 tablespoons Gorgonzola cheese 1-tablespoon Mascarpone cheese Pistachios q.s. Method Preheat your oven to 190°C (374F). Place your bread or focaccia on a baking sheet and toast it on the middle rack of your oven for 3 minutes. In a bowl, whisk together the Gorgonzola and Mascarpone cheeses until smooth and creamy. Spread the cheese cream evenly on the bread/focaccia's bottom side, then add a few slices of Mortadella and Grilled Aubergines.
