Isigny Sainte-Mère Crème Fraîche d'Isigny is a traditional cultured cream from Normandy. It features 40% fat and is matured slowly for 16-18 hours to develop its rich flavor and creamy texture. Use it to enhance sauces, desserts, or as a fresh topping.
Vegetarian. The milk used to make Isigny Cream comes exclusively from a restricted area around Isigny-sur-Mer, comprising 175 municipalities in the Cotentin and Bessin regions in Normandy. With its ivory colour, characteristic of the rich pastures, and its firm, creamy texture, the qualities of Isigny PDO Crème Fraîche are recognised by gastronomic professionals all over the world. Norbert Constant, Master Cream-maker at the Isigny Sainte-Mère Cooperative, likes to compare the maturing of the Cream to that of a fine wine in oak barrels. Slow maturing the cream in the traditional way for 16 to 18 hours allows Isigny PDO Cream to develop its distinctive flavour and texture.
