

Use this unpasteurised vegan kimchi to add a spicy, fermented kick to your meals. Kim Kong Kimchi is made with Chinese leaf cabbage and gochugaru chilli, offering a rich umami flavour. This product is crafted in the UK, bringing a British twist to traditional Korean kimchi.
Kim Kong Kimchi make monstrously good, lacto-fermented kimchi with Chinese leaf cabbage, carrots and spring onions. It's raw, vegan and unpasteurised, and in order to keep the traditional flavour and rich, deep colour we use sweet, slightly smoky 'gochugaru' chilli flakes. To make our kimchi suitable for everyone, we omit fish products and instead use aged vegan aka miso for an excellent umami kick. Some kimchis are jarred after just 3 or 4 days, but to give a richer, more developed flavour, ours is fermented for over a week.
Our kimchi is unpasteurised, so it will keep on fermenting even after you get it home. This also means some batches are fizzier than others, especially when it's warm.
Kim Kong Kimchi is packed into glass jars which can be reused or recycled.

Please keep refrigerated at all times. Loosen the lid at home to allow small amounts of gas (created by fermentation) to be released.
