Amoy Korean Fried Chicken Meal Kit
In this Amoy Korean Fried Chicken Meal kit, sweet and spicy gochujang glazes crispy panko-crumbed chicken, complemented by a savoury umami kimchi cucumber salad.
This meal kit features individual sachets of Amoy Gochujang Paste, Amoy Kimchi Seasoning, Amoy Panko Breadcrumbs and Amoy Sticky Rice. Just add chicken breasts or your choice of plant-based protein, 1 egg, 1 cucumber, 30g coriander and 3 spring onions and follow recipe steps inside the kit to guide you through the process

Cooking Instructions:
1. MAKE SALAD: Smack the cucumber against your countertop, cut in half lengthwise, remove seeds, then slice at an angle. Slice the spring onions and coriander. In a bowl mix all vegetables with half of the Kimchi Seasoning Sachet and set aside.
2. COOK RICE: In a small saucepan, add the Amoy Sticky Rice and 250ml water with a pinch of salt. Bring to a boil, then cover and turn to a low heat for 12 mins (by this time the water will have absorbed and the rice will be sticky and soft). Keep in the pan with the lid on until ready to serve.
3. FRY CHICKEN: Cut each chicken breast into 3 slices and season with the remaining Kimchi Seasoning, then dip each piece in beaten egg and coat in the panko breadcrumbs. In a pan or wok pour oil to 2cm depth. Heat the oil and shallow fry the chicken until golden brown and cooked through (approx 5 min on each side). Place on a paper towel to remove excess oil.
4. GLAZE AND ENJOY: In a large bowl mix together the Gochujang Paste, 1 tsp of sugar and 1 tbsp of water. Add the fried chicken and toss to evenly glaze. Serve and enjoy!
