Chakki Atta is a finely ground wholemeal wheat flour that is used to make flatbreads such as chapatti, roti, naan, paratha and puri. Dough made using atta flour is strong and can be rolled out into thin sheets.
Mix flour and salt (optional) together in a bowl. Add vegetable oil and stir. Gently add water, continually mixing until a semi-soft dough forms. Cover with a moist cloth and rest for 10 minutes. Make small balls, slightly smaller than an egg in size. Flatten and roll on dry flour with a rolling pin. It should be 4-5 mm thick and 6-8 inches in diameter and round in shape. Cook in a preheated skillet, tava, or griddle until golden brown on both sides. Serve with a knob of butter.
