Lottie Shaw's seriously good Yorkshire Parkin is a cake baked using the perfect blend of oatmeal, syrup, black treacle & ginger.
One of the 'Seriously Good' things about our Yorkshire Parkin is that the treacle caramelises during baking. Before it leaves the bakery, it is kept to allow it to 'come again'. This is where the caramel softens, giving each piece the perfect crumbly stickiness.
