Preparation and Usage: Serving: Just use a dollop in the roasting tray for perfect roast potatoes or parsnips. Cooking guidelines: Oven cook - From Ambient. For the perfect roast potatoes: Peel potatoes and slice into quarters. Parboil for 5-10 mins, then drain the water off the potatoes and shake so that they fluff up at the corners. Meanwhile put a generous helping of duck fat in a roasting tin and place in a preheated oven. Heat for approximately 10 mins until smoking. Add the quartered potatoes and baste in the fat. Cook for 40-45 mins at 190°C/Fan 170°/Gas 5 until golden brown.
