Once opened, keep refrigerated and use within 4 weeks.
For the perfect roast potatoes: Peel potatoes and slice into quarters. Parboil for 5-10 mins then drain. Shake so that the potatoes fluff up at the corners. Meanwhile put a generous helping of goose fat in a roasting tin and place in a preheated oven. Heat for approximately 10 mins until smoking. Add the quartered potatoes and baste in the fat. Cook for 40-45 mins at 190°C/Fan 165°C/Gas 5 until golden brown.
