This British rib of beef is matured for a minimum of 21 days to ensure a delicious and tender roasting joint. The rib of beef is generously marbled with fat which bastes the beef as it cooks, ensuring it is beautifully tender and full of flavour. This joint is hand prepared by our skilled butchers, giving you an easy to carve, easy to cook prime roasting joint.

Preparation and Usage: Handling raw meat safely: this product contains raw meat and must be cooked according to the cooking instructions. Needs Cooking Electric 200°C, Fan 180°C, Gas 6, 20-30 mins per 500g - Preheat oven - Remove all packaging (including pad). Allow product to stand at room temperature for 30 mins before cooking - Oil surface of the meat. Preheat pan until smoking hot, add the joint and sear all surfaces until golden brown - Alternatively, sear in the oven at Electric 220°C / Fan 200°C / Gas 7 for 10 mins, then reduce temperature to 200°C to continue cooking - Transfer the joint to a preheated roasting tray, cover with foil and place in the centre of the oven for: rare 20 mins per 500g / medium 25 mins per 500g / well done 30 mins per 500g - Remove, cover with foil and rest for 15 mins before carving Do not reheat.
To Carve: - Push the fork through the centre of the joint - Transfer to a secure chopping board - Slice the meat across the grain into 5 mm slices - Remove strings throughout carving - Drizzle the remaining juices over the meat
Cooking guidelines: Oven cook - From Chilled. Electric 200°C, Fan 180°C, Gas 6 Rare 20 mins per 500g Medium 25 mins per 500g Well done 30 mins per 500g Needs cooking. Remove packaging, allow product to stand temperature for 30 mins before cooking and preheat oven. Oil and season surface of meat and sear all over in a hot frying pan, before transferring to a roasting tray and placing in the oven. Alternatively, sear in the oven at 220°C for 10 mins then reduce temperature to 200°C to continue cooking. Remove from the oven, cover with foil and rest for 15 mins before carving. Do not reheat.
