Preparation and Usage: The Stand To put your stand together, place the ham holder on the end of board with two screw holders and screw in it with the help of the key. Put the long screw through the top of the holder. Screw the rest into the other end of the board and tighten it with the key. Perfect Carving A. Remove the Serrano ham joint from the vacuum packaging. Place the ham into the holder and fix it using the screw, as shown, ensuring the base of the joint is held securely in place with the rest. B. Before you begin carving the ham, consider how much will be required. Using the knife provided, remove all of the yellow fat and any other excess of fat from the sides of the ham. Only remove it from the area that is going to be sliced. The remaining fat will protect the ham and prevent it from drying out if you intend to use it on more than one occasion. C. Carve the ham from top to bottom. D. Cuts should be the width of the ham and the length between 4 - 5 cm. The thickness of the ham can be adjusted to preference. However, in order to achieve an authentic taste, it is recommended to carve very thin - almost translucent slices. Always carve away from the body. If you are enjoying this ham over a longer period of time, store the ham in a cool, dry and dark place for up to 30 days. Simply cover with a clean tea towel. Do not use cling film. Due to the nature of this product, some greyish-white surface mould may appear. This is completely normal for matured meat stored in ambient conditions. This is harmless and can be removed by gently rubbing with clean kitchen towel and olive oil, before thinly slicing away the affected area. Cover with a clean tea towel. Do not use cling film. Stand is made with food grade coating.
