Preparation instructions: Prawn or asparagus tempura Serves 4 Preparation: 5 mins Cooking: 5 mins You will need Sunflower oil for deep frying 1 packet tempura batter mix 210ml sparkling water 330g raw king prawns Or 360g asparagus tips Method 1. Half fill a saucepan with oil and heat over a medium-high heat. 2. Whisk sparkling water into tempura batter mix until smooth. 3. Dip prawns/asparagus into batter until evenly coated. 4. Test the oil by dropping a small amount of batter from a teaspoon into the oil, it immediately sizzles it is ready for frying. 5. Fry prawns / asparagus for 4 mins, remove from oil and drain on kitchen paper. Serve immediately.
