The cheese is made from high-quality sheep's milk sourced from flocks that graze freely among the hills of Val d'Orcia. Their diet consists mainly of local green or dried forage, naturally enriched with aromatic herbs such as thyme and artemisia, which grow wild in the region's distinctive clay-rich soil. These local botanicals infuse the milk, and ultimately the cheese, with a unique and unmistakable character.
Each wheel is salted by hand, following traditional methods, and then aged for a minimum of four months. As it ages, the cheese develops complex aromas, earthy notes, and a firm, flavourful texture that reflects its environment and craftsmanship.
