Italian Traditional Valtellina Bresaola. This artisanal bresaola comes from free-range Blonde Aquitaine and Garronese breed cattle. Sourced straight from a specialist producer in the Valtellina region of Italy. The beef fillet is first salted and seasoned with a mix of spices, then cured and finally air-dried. Deeper in colour than any industrially-produced version - much of which uses frozen beef - it is lightly marbled with fat, a sign of quality and craftsmanship. Take it further. Carpaccio with pepper and extra virgin olive oil. Combine with rocket and parmesan.
