What you get: - 8 rice paper sheets - Rice vermicelli noodles - Dipping sauce What you need: - 200g cooked prawns (or your choice of protein) - 50g lettuce leaves (iceberg or little gem) - Thinly sliced carrots, cucumbers and spring onions
1. Place the rice vermicelli noodles in a pan of boiling water. Reduce heat and boil rice vermicelli for 3 to 5 minutes, or until al dente, and drain with cold water.
2. Place warm water in a large flat-bottomed dish. Put a piece of rice paper in the warm water for 3-4 seconds.
3. Lay the rice paper flat on a chopping board. Place a lettuce leaf on the rice paper. Place vermicelli noodles, sliced vegetables and prawns in the centre ensuring to leave room at the sides.
4. Fold the bottom of the rice paper completely over the filling. Then fold the sides.
5. Roll up the summer roll as tightly as possible. Practice makes perfect! Repeat for each sheet of rice paper. Serve with dipping sauce.
Tips: For extra crunch and flavour, add beansprouts, fresh mint, and coriander to the rolls.
