Top Tip! The rind is already scored to produce the perfect crackling, simply pat it dry with kitchen towel, cover with 2 tablespoons of salt, working into the cuts and leave at room temperature for 30 minutes. Rub all the salt off the joint and from between the cuts, then lightly cover the rind with 1 teaspoon of salt.
