Oven: 220ºC / Fan 200ºC / Gas 7 for 45-50 mins. For roasting, preheat oven, peel, wash and cut potatoes into even-sized pieces, par boil for 10 minutes, drain and shake to roughen surfaces, heat oil in a roasting tin, add potatoes and turn in hot oil, roast for 45-50 minutes until golden and crispy. For boiling, peel, wash and cut potatoes, put in cold water, bring to boil, boil for 15-20 minutes, drain and serve.
