Vinification details: After a mechanical harvest, the best grapes are selected, destemmed, and pneumatically pressed to retain the first-press must. The must settles at 10°C, with fermentation at 16°C for two weeks using selected yeasts. The wine then ages on lees for two months in stainless steel vats.
