Paxton & Whitfield Cashel Blue is a rich and creamy blue cheese made on a family farm in County Tipperary. This tempting blue cheese has a smooth buttery texture with a balanced, mellow blue flavour which grows in strength with maturity. The rind of the cheese is particularly distinctive, with a covering of blue, grey and pink moulds, which add a welcome earthiness to the flavour of the cheese.
Paxton & Whitfield is the UK's oldest cheesemonger and celebrated its 225th birthday in 2022. The company has held the Royal Warrant of Appointment to every reigning monarch since Queen Victoria in 1850, currently holding a Royal Warrant for King Charles II.
