Siccari is Sicilian dialect for sun-dried; we let our finest grapes dry naturally in the Sicilian sunshine, a wine-making style called appassimento. The juice in the grapes becomes very concentrated, giving a wine which is truly different.
Siccari has an intense bouquet of damsons, it is voluptuous and silky-smooth, with layers of luscious flavours, from raisins to Morello cherries.

Regional information: The grapes come from vineyards in the Vittoria area of Southeast Sicily. The sandy soil is known locally as ferretti, which adds to the concentration and finesse of the wines. A proportion of the grapes are dried on the vine and the rest are picked and dried with the utmost care on racks. The name Siccari comes from the Sicilian dialect for seccare, which translates as to dry in the context of foods.
Tasting notes: Rich and complex structure, with very soft berry fruits and a touch of spice. Incredibly characterful, it has layer upon layer intense and diverse fruit flavours and a very long finish.

Vinification details: Vinification is carried out as gently as possible. De-stemming is followed by a particularly soft crushing. We carry out very frequent pumping over in the early part of fermentation. The wine is aged in 30HL Slavonian oak barrels.
