Rempapa comes from the word 'rempah', which means spice paste in Malay. Founded by cookery writer Shu Han Lee, Rempapa's range of curry pastes and sambals are packed with the flavours she grew up loving and make cooking incredible Southeast Asian dishes at home fun and simple.
This sambal is deep and fiery, with sweet caramelised chillies, lemongrass and tangy tamarind. Sambal is the quintessential chilli sauce found on tables all over Singapore, Malaysia and Indonesia. There are countless variations and family recipes. This one is slowly fried ('tumis') for hours to intensify its flavour, fragrance and colour - so it's fab straight out of the jar on just about anything! We like to dollop sambal over fried eggs or traditional nasi lemak (coconut rice). Or whisk together with soy sauce for an easy salad or noodle dressing. Storage: Store in a cool, dry place. Once opened, refrigerate and use within 2 weeks. Also suitable for freezing.
Preparation and Usage: Sambal is one of the yummiest and most versatile condiments. Use like you would use chilli oil, or a spicy ketchup - spoon over fried eggs, drizzle over noodles or vegetables, or add to a stir fry to perk things up. Here's one idea: SAMBAL SOY DRESSING 1 tablespoon Red Hot Sambal Tumis 2 tbsp soy sauce 1 teaspoon kecap manis or brown sugar (optional) Stir together, voila! Make sure to get the chilli spiked oil in there. This makes plenty for 2 bundles of egg noodles, a dozen wontons, or a platter of steamed greens.
