Vinification: When the grapes reached the winery, they were pressed at a low temperature in order to retain the aromatic potential of the variety. The must obtained was clarified and fermented for 20 days wit selected yeasts at temperatures that did not exceed 14C. Once the fermentation was complete, the wine was clarified, leaving just the fine lees in suspension for around 2 months.
