Preparation and Usage
Just Add:
- 1 red onion, cut into wedges
- 1 pepper, diced
- 1 courgette, sliced
- 4 chicken breasts, halved lengthways
- 400g tin chopped tomatoes
- 75g cheese, grated
Easy as 1.2.3...
1 Pre-heat oven to 200°C, 400°F, Gas Mark 6.
2 Arrange onion, pepper and courgette onto a large, shallow roasting tray, place the chicken on top. Mix seasoning with tomatoes and pour over the ingredients.
3 Cook in the oven for 30 mins, or until chicken is cooked through. Sprinkle with the cheese for the last 10 mins of cooking.
Try Something Different:
Perfect served with sliced roasted potatoes. For a meat free alternative replace the chicken with a can of drained butterbeans.
