Rosa's Thai founder, saiphin, suggests trying with soya mince or tofu for a tasty vegetarian alternative. Also delicious with minced chicken as we serve it at Rosa's. Adding 3-4 drops of fish sauce into the final dish brings out an even deeper Thai flavour.
