Recipes: Just add 1 Tbs oil, 500g boneless, skinless chicken thighs or breasts diced, 400g tin coconut milk, 1 small aubergine sliced and quartered, 1 red bell pepper cut into chunks, 100ml water. Heat the oil and fry the chicken for 5 minutes. Add the coconut milk, aubergine, red bell pepper, water and seasoning and bring to the boil. Reduce the heat and simmer for 4-5 minutes, or until chicken is cooked through.
