Just add: 500g Beef mince, extra lean; 1 Green pepper, diced; 1 Small red onion, diced; 400g Tin chopped tomatoes; 1 tbs Tomato purée; 600ml Boiling water; 275g Rigatoni pasta (uncooked); 75g Mozzarella and/or cheddar cheese, grated
3 Easy cooking steps: 1. Pre-heat oven to 180, 350ºF, Gas mark 4. 2. Fry mince until browned, add the seasoning, pepper and onion, and cook for a further 3-4 minutes, before adding chopped tomatoes, tomato purée, water and pasta. 3. Bring to the boil, then reduce the heat, cover and simmer for 12-15 minutes. Transfer to an ovenproof dish, top with cheese and cook in the oven for 10-15 minutes, or until bubbling and golden brown.
Pizza Express chef suggests... Trying with plant-based mince. Also great for meatballs; brown 450g meatballs, then set aside. Fry a diced onion and pepper for 5 mins, add the seasoning, 400g tin chopped tomatoes, 125ml water and the browned meatballs. Bring to the boil, cover and simmer for 15 mins, or until piping hot and meatballs are cooked through. Serve with pasta and grated cheese.
