Preparation and Safety: Work the icing with your hands until pliable. Lightly dust the work surface and rolling pin with icing sugar. Roll out to the thickness of a pound coin. Always roll on one side, do not turn over. Spread a thin layer of buttercream or boiled and cooled apricot jam onto the cake. To cover a layer of marzipan, lightly brush the marzipan with boiled and cooled water. Lift the icing over a rolling pin and place over the cake. Smooth the icing into position with the palm of your hand. Trim away any excess icing with a sharp knife.
Storage: Store in a cool, dry place. Do not refrigerate.
