Remove outer packaging, leaving inner casing on. Wash hands, all surfaces and utensils after touching raw meat. Keep raw meat separate from cooked foods.

Place joint in a roasting tray and loosely cover with foil. Cook in the centre of the oven. Remove foil for the last 30 minutes. Allow to stand for 5-10 minutes and remove inner casing before carving.
Hob: 45 mins
Place joint in a large saucepan with enough cold water to cover it. Bring to the boil and place the lid on the saucepan. Simmer on a low heat. Allow to stand for 5-10 minutes and remove inner casing before carving.
